  • 1/3 cup sugar
  • 2 packages active dry yeast
  • 2 large eggs, beaten
  • 3 1/2 cups flour (of your choice)
  • Melted butter for brushing the pans and dough

Preparation

Step 1

Place the milk in a small saucepan and bring just to a simmer over low heat. Turn off the heat and stir in the margarine and sugar until the margarine melts and the sugar dissolves. Set the pan aside so the mixture cools to lukewarm.

Place the yeast in a large mixing bowl. Pour the lukewarm milk mixture over it and whisk until the yeast dissolves. Stir in the eggs and the flour until the dough is smooth. Cover the bowl with plastic wrap and place the dough in a warm place in the kitchen to rise until doubled, about 1 hour.

Punch down the dough with your fist. Brush two baking sheets with melted butter. Pinch off about 12 pieces of dough, about 3 ounces each. Roll these into balls and space them six to a baking sheet, leaving at least 2 inches space around them. Press down the balls gently with your palm to form buns. Drape a light kitchen towel over the pans and let the dough rise until nearly doubled, about 1 hour.

About 10 to 15 minutes before baking, preheat the oven to 400 degrees. Lightly brush the tops of the buns with melted butter. Place the pans in the oven and bake until golden brown, 15 to 20 minutes. Remove the pans from the oven, and let the buns cool 10 minutes. Slice in half horizontally, and add burgers and fixings. These freeze well.
