16/05/12 - UPDATE - Added 4 slices of thinly sliced Serrano ham - was very good and Dan got his "meat". Good option if serving as a main dish.

26/11/15 - Pancetta also works. One slice, diced and cooked with onions, etc.

Ingredients

  • TO FINISH:
  • 1 tsp. EVOO
  • 1 tsp. unsalted butter
  • 3 tbsp. minced shallot or onion
  • 3 tbsp. minced celery
  • 3 tbsp. minced leeks
  • 1 clove garlic, thinly sliced or minced
  • 4 slices prosciutto or serrano or grandpa ham, sliced (Optional)
  • 1 tbsp. white wine
  • 1/3 cup arborio rice
  • 1 1/2 cups chicken broth, plus additional as needed
  • 1 cup frozen peas
  • 1 tbsp. unsalted butter
  • 1 tbsp. heavy cream
  • 4 tbsp. parmigiano reggiano
  • salt and pepper to taste
  • 2 tablespoons chopped fresh parsley and/or basil
  • grated zest of 1/2 lemon

Step 1

* Add the oil and the butter to a small saucepan over medium heat. When the butter melts, add the vegetables and the prosciutto or serrano and cook until softenend but not browned. Add the wine and cook for a couple of minutes. Add the rice and stir to coat. Cook, stirring occasionally, 3 - 5 minutes. Dump everything into the rice cooker, add the stock, cover and cook on Porridge cycle - 55 to 65 minutes.

* When the cycle is done, stir the rice and taste. If not done al dente, cook a few minutes longer. Keep warm up to 1 hour.

* When ready to serve, add the thawed frozen peas and stir just to combine and close the cover for 3 - 5 minutes to warm the peas. Stir in the butter, cream, cheese, parsley, lemon zest, salt and pepper and serve.
