- 1 pound Brussels sprouts (shaved on mandolin)
- 2 tablespoons brown mustard
- 2 scallions (finely chopped)
- 2 tablespoons sherry vinegar
- 3 tablespoons olive oil
- Kosher salt and freshly ground black pepper

Step 1
1. In a mixing bowl combine the mustard, scallions, sherry vinegar and salt.
2. Whisk in the olive oil.
3. Add the shaved Brussels sprouts and toss evenly to coat.
4. Season with additional salt and pepper and serve with pork chops or other meat.
