Ingredients

  • 3-4 lb blade or cross rib roast
  • 2 cans condensed cream of mushroom soup
  • 2 envelopes dry onion soup mix (ie Lipton)
  • 8 medium potatoes, cut in 2-3 inch pieces
  • 8 medium carrots, cut in 2-3 inch slices
  • 4 T. water

Step 1

1. If using foil, place 30"x18" piece in ungreased large roasting pan. Foil should be big enough to tightly seal all edges around meat and veg. Adjust size of foil according to pan size. If using crockpot, no foil is needed.

2. Place beef in pan. Mix mushroom and onion soup mix together; spread over beef. Place potatoes and carrots on and around beef.

3. Sprinkle water over all. I using foil, seal all edges completely; if using crockpot place lid on pot.

4 For pot roast in foil, cook in 300 degree oven for 4 hours. For crockpot cook on low 7-8 hours.
