Directions
1. Preheat oven to 375˚F (190˚C).
2. Place butter, 1/2 cup (60 g) powdered sugar and vanilla in Vitamix container and secure lid.
3. Select Variable 1.
4. Turn machine on and slowly increase speed to Variable 4.
5. Blend for 15 seconds or until mixture is “creamed.”
6. Stop machine; remove lid; scrape sides of container.
7. Add nuts and flour to the Vitamix container and secure lid.
8. Select High speed.
9. Slowly turn machine on and off until mixture is combined, using the tamper. You may need to stop the machine and run a spatula around the side of the container to integrate ingredients.
10. Once dough is combined, shape dough into 1 inch (2.5 cm) balls.
11. Place on cookie sheets and bake for 13 to 16 minutes or until firm.
12. Remove from oven and let sit on cooling rack for 5 minutes.
13. Roll cookies into extra powdered sugar until coated while warm.
14. Repeat process with all cookies, rolling each cookie twice in powdered sugar.
