Ingredients
- 4 pounds lean beef short ribs
- salt & pepper, to season meat
- 1 T vegetable oil
- 1 large onion, diced
- 3 garlic cloves, chopped
- 1 c dry red wine
- 8 plum tomatoes
- 1 T tomato paste
- 1 T dried sage or thyme
- 1 tsp cumin powder
- 1/2 tsp fennel seeds
- 1/4 tsp salt
- 1/4 tsp black pepper
- cilantro or parsley for garnish

Step 1
1. Rinse and pat dry ribs with paper towel. Season with salt and pepper
2. Heat 1 T oil in a large ovenproof dutch oven over medium-high heat. Brown on all sides, in batches if necessary. Remove meat from pan.
3. Preheat oven to 300 deg. Add onions and garlic to pan and cook for 3 min. Add wine, bring to a boil and simmer until reduced by half about 5-8 min.
4. In blender or food processor, puree together tomatoes, tomato paste, sage, cumin, fennel, salt and pepper. Add tomato mixture to pan, along with meat.
5. Cover pan with lid and gook in preheated oven for 2 1/2 hours or until very tender. Flip meat halfway through cooking.
6. Place meat on serving plates, ladle sauce over top. and garnish with fresh herbs.
