Ingredients
- 2 large boneless, skinless chicken breasts, flattened
- 1/2 cup fire roasted red peppers
- 1/4 cup goat cheese
- 1/2 cup fresh spinach
- 2 cloves of garlic, minced
- 1 t. oregano
- 1 t. basil
- salt and pepper
- paprika

Step 1
Preheat oven to 375 F.
Season chicken with a little salt and pepper and paprika on both sides.
Mix the rest of the ingredients together, (add salt and pepper here too). Spread a thick layer over chicken. Pulls ends of chicken together and secure with twine or toothpicks to seal in the stuffing.
Place in a baking dish and cook at 375 F for about 45 minutes. In the last 5 minutes, put the oven on low broil and brown the chicken on both sides (watch during broiling as it will burn easily).
