    cups all purpose flour

    tbsp cocoa flour

    tsp salt

    cups sugar

  • 1 1/2

    cups vegetable oil

    large eggs, room temperature

  • 1

    oz green food coloring

  • 2

    tsp vanilla extract

  • 1

    cup low fat buttermilk

  • 1 1/2

    tsp baking soda

  • 2

    tsp distilled white vinegar

  • Cream Cheese Frosting

  • 8

    oz reduced fat cream cheese, room temperature

  • 1/2

    cup butter, room temperature

  • 1 1/2

    cups powder sugar

  • 1

    tsp vanilla extract

Directions

Cupcakes 1.Preheat oven to 350 2.Line a cupcake tin with liners 3.In a large bowl whisk together flour, cocoa powder & salt 4.In the bowl of an electric mixer whisk together sugar and pumpkin until combined 5.Add eggs, one at a time, until each is well incorporated, making sure to scrape down the sides of the bowl as necessary 6.Mix in food & vanilla extract 7.Reduce speed to low and add in flour mixture, alternating with the buttermilk, starting and ending with the flour mixture 8.In a small bowl mix together the baking soda & vinegar, it will foam, & add to the cupcake mixture, mixing on high for 10 seconds 9.Divide batter evenly (I used a ice cream scoop) among cupcake liners and bake for 17-18 minutes or until a toothpick inserted in the middle comes out clean 10.Cool completely and then ice with cream cheese frosting Cream Cheese Frosting 1.In the bowl of an electric mixer beat butter & cream cheese until fluffy, 2-3 minutes 2.Reduce speed to low and add in powder sugar slowly until well combined and smooth 3.Add in vanilla and mix until well incorporated 4.Frost cooled cupcakes 5.ENJOY!
