Ingredients

  • 3 cups Whole Wheat Flour
  • 1/2 cup White Chia Seed
  • 1-1/2 Tsp baking soda
  • 1-1/2 tsp Salt
  • 1-1/2 Tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 3/4 cup butter
  • 3/4 cup sugar
  • 3 eggs
  • 3/4 cup honey
  • 1-1/2 tsp vanilla
  • 3/8 cups Apple Sauce
  • 1 Large Granny Smith Apple, peeled and finely chopped
  • 2-1/4 cups dried fruit of your choice, choose 3 of the following: Dried apricots, Raisins, Prunes or Goji berries
  • 2-1/4 cups Coconut

Step 1

In a large bowl, combine flour, chia seed, baking soda, salt, cinnamon, ginger, cloves and nutmeg. In a mixer, cream the butter. To the butter mix, adding one at a time, blend in sugar, eggs, honey, vanilla and applesauce.

Add the flour mixture to the butter and blend well. Add the apple and dried fruit pieces to the mixture and blend well. Add the apple and dried fruit pieces t the mixture and mix well. Mix in nuts, coconut shreds and oats by hand. Drop by large spoonfuls and pat with your spoon into shape, approximately 3/8 inches thick, onto greased baking sheets.

Note: This dough is very sticky. Bake at 350 for 20-25 minutes. Do not over bake.

Remove from oven, cool several minutes and remove to racks. When completely cool, you can wrap them individually in plastic wrap and place in freezer.
