Ingredients
- 1 lb. elbow macaroni
- 1 lobster
- 1/2 cup butter
- 2 cups flour
- 3-4 cups milk
- White pepper
- Salt
- 2 cups sharp cheddar cheese, grated, or more to taste
- crackers, crumbled

Step 1
1.) Preheat oven to 400°, and while oven is heating, cook macaroni according to package directions.
2.) Boil lobster for 7 to 8 minutes, then remove claw and tail meat. Dice finely.
3.) To prepare cheese sauce, make a roux by melting butter in a medium saucepan and adding flour. Cook for about 10 minutes, stirring constantly with a wooden spoon. The roux should have the consistency of thick paste - add more butter if it appears overly thick.
4.) Add 3-4 cups of milk, depending on desired thickness, plus salt and white pepper to taste, and bring to a simmer, stirring constantly.
5.) Add grated cheese (increasing amount to taste) and stir until cheese is melted and sauce is smooth.
6.) In a large bowl, mix cheese sauce into macaroni, adding sauce slowly until macaroni is thoroughly coated. Mix in the lobster, reserving some to sprinkle on top.
7.) Transfer macaroni and cheese to a 9x13 inch baking dish. Crush crackers into "bread crumbs" and sprinkle on top in thin layer. Bake for 10 minutes, until bubbling. Top with remaining lobster before serving.
