Ingredients
- 1 - 9 " pie crust shells
- 1/2 finely chopped onion
- (1 c milk)
- 4 whole eggs
- 1 c shredded cheddar cheese
- (Sprinkle of nutmeg)
- (Salt & pepper to taste)
- 1 - 15 oz cans pickled beets
- Several red lettuce leaves
- Parmesan cheese

Preparation
Step 1
Bake pie crust according to package directions. Preheat oven to 375º. Sauté onion in skillet coated w/ cooking spray. Put cooked onioncooled pie shell.
Sprinkle with 1 c cheese. Whisk milk & eggs in small bowl, adding salt, pepper & nutmeg. Pour egg mixture over cheese. Bake for 35-40 min or until middle has set.
Chill beets in fridge for several hrs. Drain beets and
serve slices on lettuce or spinach leaves topped w/
Parmesan cheese.
