Ingredients
- Filling:
- 1 1/2 C. cornmeal
- 1 (Number 2) can creamed corn
- 2 eggs, beaten
- 1 1/2 C. butter milk
- 1/2 tea. soda
- 1/2 C. bacon drippings
- ● Mix batter ingredients together and set aside.
- 1 lb. hamburger meat
- 1 onion, chopped fine
- 1 lb. American cheese, grated
- 3 jalapeño peppers, seeded and chopped
- 1 (2 oz.) jar pimento, chopped
- 2 T. cornmeal
- ● Sauté hamburger meat.
- ● In separate bowls, place onion, cheese, jalapeño, and pimento.
- ● Sprinkle cornmeal in greased iron skillet or 2 quart corning dish and brown.
- ● Pour 1/2 of the batter in skillet and then layer jalapeño, cheese, meat, onion and pimento.
- ● Pour remaining batter on top, and bake at 350 degrees for 45 minutes or until done in center.
