Ingredients

  • 4 boneless half chicken breasts - raw
  • 2 cans chicken broth (15 oz. each)
  • 1 can diced tomatoes (15 oz)
  • 1 small can tomato sauce
  • 1 pkg. taco seasoning mix
  • 1/2 large white or yellow onion - chopped
  • 1/2 t minced garlic
  • 1 T worcestershire sauce
  • 1 T butter
  • 1 C fresh chopped cilantro
  • 1 handful crushed tortilla chips
  • 1 can corn - not drained
  • 1 small can diced mild green chilies
  • salt and pepper to taste

Preparation

Step 1

Place all ingredients in crock pot on high for 4 1/2 hours or low for about 6 1/2 hours. Removed chicken, shred with 2 forks and mix into soup.

To serve: Ladle into bowls and top with shredded cheddar of Mexican mix cheese, sour cream and crushed tortilla chips.

Serve with salad and corn bread.
