Ingredients

  • 4 slices of bread (multigrain or French)
  • 1/4 CUP (50 ml) Ricotta cheese
  • 1/4 cup (50 ml) diced bottled roasted red peppers
  • black pepper to taste
  • 1 cup (250 ml) cooked ground chicken
  • salt to taste
  • 8 thin slices Old Cheddar or Gruyere cheese
  • 2 tbs (30 ml) olive oil

Preparation

Step 1

1. Lightly toast bread
2. Mix ricotta, roasted peppers, black pepper, chicken and salt.
3. Spread over toast and top with cheese slices.
4. Broil for 1-2 minutes until cheese begins to melt.
5. Sprinkle with olive oil if desired.

Variations:
Use 1 cup (250 ml) of diced cooked chicken breast/thigh instead of ground chicken.
Use smoked Gouda instead of Cheddar or Gruyere
Use 1/4 cup (50 ml) diced sundried tomatoes instead of roasted peppers.
