Ingredients
- 2 cups Old Hampton Store Soup Mix
- 2 quarts water
- 1 ham hock
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 16 ounce can whole tomatoes, undrained and coarsely chopped
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 chili pepper, coarsely chopped
- 1/4 cup fresh squeezed lemon juice

Step 1
Sort and wash 2 cups beans from mix, place in bean pot, preferably cast iron). Cover with water a few inches above beans; and soak overnight. Drain beans, add water, ham hock, salt and pepper. Cover and bring to a boil; reduce heat, simmer 1 1/2 hours or until beans are tender. Add remaining ingredients, simmer 30 minutes, stirring occasionally. Remove ham hock. Pick meat from one, chop and return to soup.
