Ingredients
- Wash beans and cover with water. Soak overnight. Drain and cover with 3 quarts cold water.
- Add
- 3 ham hocks
- 1 garlic clove, crushed
- 2 bay leaves, whole
- Salt to taste
- 1 t white pepper
- 1 cup chopped onion
- 1/2 t cayenne or pepper sauce

Preparation
Step 1
Boil and reduce to simmer 2 1/2 - 3 hours. Beans should be soft. Mash some on side of pan. Soup should be thick. Remove ham hocks and bay leaves. Discard bones and bay leaves and return meat to soup. Serve over hot cooked rice.
