Ingredients

  • 2 slices Wheat bread
  • 3 oz. Monterrey Jack
  • 1 teaspoon Dijon Mustard
  • 1 apple, thinly sliced
  • 2 eggs
  • 1 tablespoon Milk
  • 1/2 teaspoon Vanilla
  • 1/2 teaspoon cinnamon
  • 2 slices bacon
  • butter, for skillet
  • Sea salt and fresh cracked pepper to taste.

Preparation

Step 1

tart bacon cooking in a skillet over medium heat.

Prepare the french toast dip by beating one of the eggs with the milk, vanilla and cinnamon in a shallow dish. Set aside.

Place a tablespoon of butter in a large skillet over med-low heat.

Evenly spread mustard on the bread. Layer with apple and cheese. Dip each side carefully into the french toast mixture holding the sandwich together. I didn't dip the ends or the sides. Place in the prepared pan. Grill each side until golden.

In the same pan cook your egg according to your personal preference. I fried mine in a little bit of butter. I put a lid over it to cook the top leaving the yolk gooey.

Top your sandwich with the egg and bacon
