Red Velvet Cheesecake
This recipe is courtesy of Delish Dish.
To make a thicker cake layer, I think I'm going to try doubling all of the ingredients except for the crust and baking longer.

Ingredients
- 2 packages (8 ounces each) cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 ounces semi-sweet baking chocolate, melted
- 1 tablespoon red food coloring
- 1 prepared chocolate crumb crust (6 ounces)

Preparation
Step 1
1. Preheat oven to 350°F. Beat cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add in eggs one at a time while beating on low speed.
2. Put 1 cup batter into medium bowl and stir in melted chocolate and food color. Pour into crust. Top with remaining (plain) cheesecake batter.
3. Bake 40-50 minutes or until center is almost set. Cool completely on wire rack.
4. Refrigerate 3-4 hours or overnight.
Serve and enjoy!
