CHOCOLATE MOUSSE

Ingredients
- 8 oz bittersweet chocolate, coarsely chopped
- 6 eggs, separated
- 3 tbsp water
- 2 cups whipping cream, well chilled
- 6 tbsp sugar
- Whipped cream, grated semi-sweet chocolate and toasted almonds or hazelnuts for garnish

Preparation
Step 1
Melt chocolate by placing it in a covered pot on top of a larger pot of barely simmering water, double-boiler style. Meanwhile, put egg yolks in a saucepan and add water. Place saucepan over very low heat. Whisk yolks vigorously. When the yolks thicken slightly, remove saucepan from heat. Stir melted chocolate with a whisk and add it to egg mixture. Blend thoroughly. Transfer to large mixing bowl. In chilled bowl with hand-held mixer, beat cream until it forms soft peaks. Add 2 tbsp sugar near the end. Fold into chocolate mixture.
Using clean mixer, beat egg whites until they form soft peaks. Add remaining sugar and beat again until egg whites form stiff peaks. Fold this mixture into mousse mix.
Spoon mousse into a serving bowl and chill thoroughly before serving. Garnish with whipped cream, grated semi-sweet chocolate, toasted almonds or hazelnuts.
