Diana's Buttery Oatmeal Cookies

I got this recipe years ago from a website called Diana's cookies.
These are just the most delicious cookies ever. Honestly, everyone says
they are the best oatmeal cookies they've ever tasted and my friends are
normally not that polite LOL. They are great when done as the recipe
instructs below but I always make at least one sheet of super thin ones.
I simply flatten then out almost completely with three wet fingers and
cook the same amount of time (although watch as they can burn). They
come out so crunchy that we make crumbs and sprinkle over ice cream,
cereal ... you name it. I know the lard aspect might seem strange but I
have tried them on parchment paper and buttered sheets and they do not

Ingredients
- 1 3/4 cups old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 3/4 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/4 sticks (5 oz/140g/5/8 cup) unsalted butter, softened
- 1/3 cup packed light brown sugar
- 1/3 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract

Step 1
1. Grease 2 baking sheets with Crisco or lard (solid shortening). Sift together oats, flour, cinnamon, baking soda, and salt. With an electric mixer, beat together softened butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla and beat until well combined. Add oat mixture and beat until just combined. Drop dough by heaping tablespoons 2 inches apart onto baking sheets and flatten mounds slightly with moistened fingers. Bake cookies in upper and lower thirds of oven, switching position of sheets halfway through baking, until golden, about 12 minutes total.
2. (I have more success baking one sheet at a time).
3. Transfer to racks to cool.
