Ingredients

  • 3 cups large elbow macaroni
  • 3 TBS. butter
  • 3 TBS. flour
  • 1/4 cup minced onion
  • 1 tsp. salt
  • 1/4 tsp. dry mustard
  • dash cayenne pepper
  • 2 1/2 cups milk (I use 2%)
  • 1 egg well beaten
  • 3 cups shredded cheddar cheese*
  • 1 Tbs. flavored bread crumbs
  • 1 Tbs. parmesan cheese

Step 1

Cook macaroni, drain and set aside. Melt butter, add minced onion, then wisk in flour, salt, pepper and dry mustard. When smooth, add milk a little at a time, wisking to incorporate, stirring constatly then add egg and wisk some more. Add cheddar or a mixture of the three cheeses, stirring until cheese is melted. Grease an 8" square baking dish (smaller if you halve it). Pour over macaroni and sprinkle bread crumb/parmesan mixture over the top. Cover and bake in 350 degree preheated oven for 20 minutes, uncover and bake 10 minutes more.

*You can replace one cup of the cheddar with 1/2 cup gouda shredded and 1/2 cup swiss shredded with 2 cups cheddar if you like a real cheesy taste.
