Ingredients
- Filling:
- shell: 1 cup flour
- 2 Tbs. sugar
- 2 Tbs. Crisco
- pinch of salt
- 1 egg beaten
- 1 tsp. vanilla
- 1 tsp. vinegar
- 2 Tbs. cold water
- 1 lb. whole milk Ricotta cheese
- 1tsp. vanilla
- 3/4 cup powdered sugar
- 1/2 cup finely chopped walnuts
- 1/2 cup mini chocolate chips
- powdered sugar

I have made these delicious cannoli ever since I can remember. They are simply better than any bought cannoli you've ever had. I make them only for special occasions. Easter and Christmas.
They are a lot of work but with practice, become easier. This is something that doesn't hold up well in the refrigerator. Stuff them just before serving. They will get soggy after a few hours. I make the shells a day ahead and store them in paper lunch bags.

Directions
For the shells: Combine 1st. four ingredients blend with fork until combined
add next three ingredients. Stir with spoon.
Slowly add water (may not need all) until dough is formed. Do not over mix.
In fry pan heat 1/2" Crisco to 350.
For the filling: Combine all ingredients and blend well.
