Rice - Fried 'Bennies Style'

Ingredients
- 4 cups Cooked Converted or Parboiled Rice
- 1 cup Frozen Peas - thawed
- 1 Tbs Carrot - finely grated
- 1/2 cup Onions - diced
- 2 Eggs - beaten
- 1- 1/2 Tbs Butter
- 2 Tbs Soy Sauce

Step 1
1 Cook Rice per package. Pour Rice into Lrg. bowl to let cool in Fridge.
2 Scramble Eggs, creating small pea sized bits.
3 When rice reaches room temp., add Peas, Carrots, Egg & Onions to the bowl. Toss ingredients together.
4 Melt Butter in pan over Med./ High heat.
5 When completely melted, dump ingredients into pan, add Soy Sauce + dash of Salt & Pepper. Cook for 6 to 8 min. over heat, stirring often.
