  • 1 lb wax or green beans
  • 1 tbsp olive oil
  • salt and pepper
  • 2 tsp soy sauce
  • 1 tsp lemon juice
  • 1 tsp brown sugar
  • 1/4 cup roasted peanuts
  • 1/4 cup cilantro leaves

Step 1

Preheat oven to 450. On a rimmed baking sheet, toss beans, trimmed, with olive oil and season with salt and pepper. Roast until browned and tender, 15 minutes, tossing halfway thru. In a medium bowl, combine soy sauce, lemon juice, and brown sugar. Add roasted beans to bowl, then add peanuts and cilantro, toss to combine.
