Ingredients

  • Sauce:
  • 1/2 cup creamy peanut butter
  • 1/2 cup reduced sodium Soy Sauce
  • 1/4 cup rice vinegar
  • 1/3 cup sugar
  • 1/4 cup red pepper sauce
  • Kabobs:
  • 6 boneless skinless chicken cut into strips
  • 1 large red bell pepper cut into chunks.
  • Cooking spray

Preparation

Step 1

Heat grill. in a 2 quart saucepan mix peanut butter, soy sauce and vinegar until smooth. Stir in sugar and pepper sauce. Cook over medium heat about 2 minutes, stirring occasionally until thickend. Place 3/4 cup sauce in a small serving bowl to use as a dipping .
On each of the skewers thread 4 chicken strips, 4 bell peppers alternating leaving 1/4 inch space between each piece. Brush chicken and peppers with remaining sauce.
Spray kabobs with spray to prevent sticking. Place them on the grill on medium heat cover and cook 5 minutes. Turn and brush with more sauce cook 2 to 3 minutes more or until chicken is no longer pink.Discard brushing sauce and serve with reserve.
