Ingredients

  • 1 c. oil
  • 1 ½ c. sugar
  • 2 eggs
  • 1 t. soda
  • 1 c. buttermilk
  • 3 ½ c. sifted flour
  • 1 t. baking powder
  • 1 t. vanilla
  • 1 t. salt

Preparation

Step 1

Cream the oil, sugar and eggs on medium speed for 15 min. During the 15 minutes, the oil, sugar and eggs are mixing, put soda in buttermilk and mix well. Sift flour, baking powder and salt. Turn mixer back to blending and alternate adding buttermilk and flour mixture. Add vanilla. Also can add ½ c. chopped nuts if desired. Put in refrigerator overnight. Drop by heaping tablespoon onto greased cookie sheet. Bake at 400 for 8-9 min. Frost when cool. Makes 3 dozen. Do not let cookies touch.


Frosting:
¼ c. butter (melted)
2 c. powdered sugar
1 t. vanilla
2-3 T. evaporated milk (try 1 T. at a time)

Beat together at high speed.
