Ingredients
- 2 cups wild rice
- 1 Tablespoon salt
- 2 Tablespoon butter
- 4 ounces market bacon cut across into 1/4 inch slices
- 1/2 cup white rice
- 2/3 cup onions chopped
- 2/3 cup mushrooms chopped
- 1 teaspoon freshly ground pepper

Step 1
Cook rices separately until done. Do not over cook the rice. It nees to be crunchy. In a large heavy skillet, melt butter and cook bacon. drain on paper towel. Add onion to skillet; cook 3-4 minutes and add mushrooms for a few minutes. Pour rice in with the mixture; toss and put in casserole.
Optional: add a little sour cream, lime juice, and mutmeg just befre serving.
