Ingredients

  • 2 stalks celery, thinly sliced (1 can)
  • 3 T butter
  • 2 T flour
  • 1-14 oz. Can of chicken or veggie broth
  • 2 C refrigerated diced potatoes with onions
  • 1-1/2 c milk
  • 1 c half and half
  • 4 slices bacon, crumbled
  • Salt and pepper

Preparation

Step 1

In saucepan cook celery in butter over med heat, about 5 mins. Stir in flour. Stir in broth, bring to boil, stirring constantly. Add potatoes, return to boil. Reduce heat, simmer uncovered 15 mins. Slightly mash potatoes. Stir in milk, half and half and bacon. Season with salt and pepper.
You could add 1 cup frozen peas and carrots, 8 oz chicken tenders, cooked and chopped and 1 T snipped tarragon or oregano, crushed.
