  • 16 cups tomatoes (may use up to 18 cups), peeled & chopped
  • 4 cups onion, Diced
  • 1/2 cup Jalepeno pepper, finely chopped (Seeds & All)
  • 2-1/2 cups white vinegar
  • 3/4 cup sugar
  • 1/3 cup pickling salt
  • 2 Tsp each black pepper, chili powder & cummin
  • 3 Tbls garlic salt or fresh garlic
  • 1 tsp powdered alum
