Ingredients
- 1 1/2 tbsp butter
- 1 fresh green onion, minced
- 1 small. onion, minced
- 1/2 pound chicken, breast, minced
- 1/2 cup white wine
- 1/2 cup whipping cream
- Salt and pepper to taste
- Cayenne pepper to taste
- 4 eggs
- Freshly grated Parmesan cheese
- Toast

Preparation
Step 1
Heat oven to 400F. Melt butter in saute pan over medium heat. Saute onions until transparent. Add chicken and saute, stirring with wooden spoon or spatula to flake the meat. When chicken is cooked through, add wine and cream to pan. Cook until liquid is reduced by half. Add salt, pepper and cayenne.
Divide chicken mixture among 4 gratin dishes. Crack an egg into center of each mixture. Sprinkle with Parmesan if desired. Bake 4 - 5 minutes or until egg is done to your liking.
Serve with toast.
