Blueberry Muffins

Ingredients

  • 1 cup frozen blueberries thawed and drained well
  • 3/4 cup plus 1 Tablespoon Sugar
  • 2/3 cup unsweetened applesauce
  • 1/4 cup egg substitute
  • 1/4 cup vegetable oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 cup buttermilk
  • 2 cups flour all purpose
  • 2 teaspoons baking powder

Preparation

Step 1

preheat oven to 325 degrees

In a large bowl mix together
3/4 cup sugar, applesauce, egg, oil, salt, vanilla ad baking soda
add buttermilk and blend well
in a separate bowl sift together the flour and baking powder add the dry ingredients to the wet and mix well with an electric mixer
now with the blueberries add 1 tablespoon of sugar and
then add the blueberries by hand to the batter fold in gently

Makes 8 jumbo muffins in a texas size muffin pan sprinkle with sugar on top
bake20 to 24 minutes
or regular size muffins bake 16to 20 minutes
