Ingredients

  • Wasabi Cream:
  • 1 small loin of tuna, about 2" x 2" x 6"
  • 1/4 cup white sesame seeds
  • 1/4 cup black sesame seeds
  • 3 TB wasabi powder
  • 2 TB water
  • 1/4 cup sour cream
  • 2 TB half & half, as needed for consistency
  • Wonton Crisps:
  • Wonton wrappers
  • egg whites

Preparation

Step 1

For Wonton Crisps:

Cut wonton wrappers into desired shape. (I like triangles). Brush with egg white. Sprinkle with salt and black and white sesame seeds. Bake in 325 degree oven until crisp.

For Tuna:

Heat a saute pan over high heat.

Combine black and white sesame seeds on a small tray. Roll tuna loin in the seeds, coating the outside of the tuna loin.

Cover the tuna tightly with aluminum foil. Place the foil-covered tuna in the hot pan. Turn to each side after about 20 seconds.

Unwrap the loin, there should be about 1/4" = 1/2" thickness all around the outside of the loin that is cooked.

Slice thinly and serve on wonton crisps. Drizzle with soy sauce and wasabi cream.
