Ingredients
- BP's Dry Rub for 10lbs of ribs:
- 10 lb Pork Spare Ribs
- 1 jar McCormick Dried (rubbed) sage (.62 oz)
- 2 jars McCormick Chili powder (2.12 oz)
- 1/2 cup brown sugar
- 3 TB salt
- 2 TB pepper
- 1 tsp cayenne or dried chipotle powder (optional, to taste)
- 2 TB cumin

Step 1
Excluding spare ribs, mix all ingredients well and store in an airtight container. This should be enough rub for 10 lbs of ribs.
Preheat oven to 325 degrees. Liberally coat each rack of ribs - both sides - with spice mixture.
Arrange the ribs on a sheet tray and cover loosely with aluminium foil. Bake at 325 for approximately 2 hours. Remove the foil and allow ribs to cook at least another 30 minutes or until the meat is tender and easily pulls off the bones.
