Ingredients

  • 1

    lb pike fillet

  • 3

    tb butter

  • 1

    sm diced onion

  • ½

    diced green pepper

  • 1

    diced celery stalk

  • ½

    c tomato (peeled

  • seeded & chopped)

  • c heavy cream

  • 1

    c grated swiss cheese

  • ½

    c bread crumbs

  • ½

    ts salt

Directions

Heat oven to 350. Wash & dry fish. Place in greased casserole. Heat butter in pan. Add onion, pepper & celery; saute until tender. Add tomato & simmer until liquid has evaporated. Spoon over fish. Add cream & sprinkle with cheese & crumbs. Bake 30 minutes.
