Pulled Pork with Root Beer Sauce

- 2-3 lbs of pork sirloin roast
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 Tbsp cooking oil
- 2 med. onions, cut into thin wedges
- 1 cup root beer (not diet)
- 6 cloves of minced garlic sauce (see below)
- 8 to 10 hamburger buns, toasted

- 3 cups root beer (not diet)
- dash of bottled hot pepper sauce
- 1 bottle of chili sauce

Step 1
Pulled Pork Roast:
Trim fat from meat. If necessary, cut roast to fit into your 3 1/2- or 5-quart slow cooker.
Sprinkle meat with salt and pepper. In a large skillet, brown meat on all sides in the hot oil. Drain off fat, transfer meat to the cooker. Add onions, 1 cup of root beer and garlic.
Cover and cook on low for 8 to 10 hours, or on high for 4 to 5 hours.
Transfer roast to cutting board or serving platter. Using a slotted spoon, remove onions from cooking juice and place on the serving platter. Discard juices.
Using 2 forks, pull meat apart into shreds.
Root Beer Sauce:
To make the sauce, combine in a medium saucepan 3 cups of root beer and the chili sauce.
Bring to a boil; reduce heat. Boil gently, uncovered, stirring occasionally for about 30 minutes, or until mixture is reduced to 2 cups, if desired, add the bottled hot pepper sauce to the concentrated root beer.
