Ingredients

  • 1 pound dried red beans or kidney beans
  • 2 medium onions, chopped
  • 2 stalks celery, chopped
  • 1 clove garlic, minced
  • 1 1/2 pound smoked sausage
  • 1 hambone with meat (optional)
  • 1/4 t basil
  • 1/4 t thyme
  • pinch cayenne
  • pinch creole seasoning (optional)
  • Salt
  • 1 cup raw white rice

Preparation

Step 1

Cover beans with water and soak overnight. Pour water off beans; put beans in a slow cooker. Cover with fresh water. Add hambone and seasonings. Cook on medium (180 degrees) for 8 - 10 hours. About two hours before serving add sausage, sliced. Cook rice. Serve beans over rice. Sprinkle horseradish on top if desired.
