Ingredients

  • 1 1/2 cups candied pineapple chunks
  • 3 cups golden raisins
  • 1 1/2 cups candied cherries
  • 1 cup dried currants
  • 2 oz candied orange peel
  • 2 oz candied citron peel
  • 1/2 cup orange juice
  • 2 cups butter
  • 4 cups powdered sugar
  • 8 eggs, separated
  • 4 cups chopped pecans
  • 3 cups AP flour

Preparation

Step 1

Chop fruit. Combined chopped fruit w/ currants orange peel and citron and soak in orange juice overnight. Preheat oven to 275* . Place a small pan of water in the oven. Line one 9-5 inch loaf pan and 2 3-8 inch loaf pan with parchment or double wax paper. In a large bowl cream butter and sugar. Stir in beaten egg yolks , fruit juice and pecans, mix in the flour. In a clean bowl beat the egg whites it peaks and fold in. Fill thepans 2/3 full and bake 2 to 2 1/2 hours till golden and toothpick is clean.
