Ingredients
- 1/4 c flour
- 2 eggs, lightly beaten
- 3/4 c nuts, almonds, pecans, or walnuts, ground
- 2 tbs herbs, basil,thyme, or parsley, chopped
- 2 tbs evoo
- 2 beefsteak tomatoes
- 8 slices cheese, Gruyere,Havarti, provolone, or swiss
- salt and pepper to taste

Preparation
Step 1
Make bundles, 2 slices of tomato with 2 slices of cheese in between.
Dredge bundle in flour with salt and pepper.
Roll in egg then in nuts mixed with herbs.
Pour evoo in skillet. Cook bundles until golden and cheese is melted, 2-3 minutes.
