Ingredients

  • 1 cup butter or margarine, softened
  • 1 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/4 cups all-purpose flour
  • 3 cups quick-cooking oats
  • 1 cup chopped walnuts or pecans
  • 1 cup raisins (optional)

Preparation

Step 1

1. In a large bowl, cream together butter or margarine and sugars until fluffy. Add eggs one at a time, mixing well after each addition. Blend in vanilla, cinnamon, salt, and baking soda.
2. Stir in flour, oats, nuts and raisins, and mix until just blended.
3. Drop by spoonfuls onto an ungreased cookie sheet.
4. Bake at 325°F (160°C) for 12 minutes. Cool cookies on a wire rack.
