Ultimate Waffled Croque Madame

Ingredients
- Waffle:
- 2 eggs
- 2 cups of all purpose flour
- 1 3/4 cups of milk
- 1/2 cup of vegetable oil
- 1 tablespoon of white sugar
- 4 teaspoons of baking powder
- 1/4 teaspoon of salt
- 1/2 teaspoon of vanilla extract
- Bechamel Sauce:
- 2 tablespoons of butter
- 2 tablespoons of flour
- 1 1/4 cup of warm milk
- 1/2 cup of grated cheese
- salt and pepper to taste

Preparation
Step 1
Waffle:
In a bowl, beat eggs until fluffy. Add remaining ingredients to bowl and beat until smooth
Spray waffle iron with non stick cooking spray, pour mixture onto hot iron and cook until golden brown.
Sauce:
Melt butter, then add flour and mix under medium flame for 2 minutes.
Add warm milk and mix until smooth desired consistency is achieved.
Add grated cheese, mix well, THEN add salt and pepper to taste.
Ultimate Waffled Croque Madame:
Waffle
Bechamel sauce
Grated cheese
Ham
Cooked bacon slices (can be cooked in waffle iron, simply cut, place and press until golden brown)
2 eggs
Salt and pepper to taste
Take cooked waffle, add bechamel, ham, bacon and grated cheese, and place in waffle iron for 30 seconds or until cheese is melted.
Remove from iron, spray iron or add bacon fat then add 2 whole eggs, trying to spread out for even cooking.
When whites are firm remove with a spatula, add salt and pepper then place on croque madame, you may add more cheese if desired.
