Ingredients
- 1 teaspoon butter
- 1 tablespoon shallots, minced
- 1 teaspoon garlic, minced
- 1 cup white wine
- 2 cups heavy cream
- 1/2 cup Parmesan cheese, grated
- 1/4 cup Mozzarella cheese, shredded
- 1/4 cup provolone cheese, shredded
- 1/2 cup Boursin cheese, with herbs & garlic, shredded
- 1 teaspoons chives, chopped
- 1 teaspoon basil, julienned
- 1 teaspoon thyme, chopped
- salt and pepper to taste
- 1 pound pasta of your choice.

Step 1
In a large saute pan over medium heat, melt the butter. Add the shallots and garlic and saute until the vegetables ore soft, about 3-4 minutes. Add the white wine and simmer to reduce the liquid by 2/3. Add the heavy cream and let reduce by half. Reduce the heat to low and slowly add the cheeses and herbs. Season with salt and pepper. Let the cheese melt slowly. Do not scald. Toss the sauce with the cooked pasta and serve immediately.
