Slow-Cooker Cheesy Chicken and Potatoes

Ingredients
- 1/2 of a green pepper, chopped
- 1/2 of a red pepper, chopped
- 1 small onion, chopped
- 1 tsp salt
- 1 lb. red potatoes, very thinly sliced
- 1 tsp. paprika
- 1 pound of boneless, skinless chicken breasts
- 1 pound of boneless, skinless chicken thighs
- 1 can condensed cream of chicken soup
- 1/3 cup milk
- 4 oz. velveeta, cubed
- 1 Tbsp. Worcestershire sauce
- 1/2 tsp. black pepper
- 1/4 cup chopped fresh parsley

Step 1
Add peppers and onions to bottom of the slow cooker coated with cooking spray. Sprinkle with 1/4 tsp. salt. Top with potatoes. Sprinkle with another 1/4 tsp. salt. Mix the paprika with the last 1/2 tsp. salt and sprinkle over the chicken. Add chicken breasts over the potatoes. Add thighs next. Mix soup with milk and pour over the top. Cover and cook on LOW 6-8 hours or on HIGH 3-4 hours. Use a slotted spoon to transfer chicken and veggies to a serving platter. Cover to keep warm. Add velveeta, pepper, and Worcestershire to the reserved liquid in slow cooker. Cook and stir on high until the cheese is melted. Spoon over chicken and vegetables. Top with parsley.
