  • Optional Icing:
  • 2/3 c Butter, softened
  • 1 c Sugar
  • 1/4 c Eggnog
  • 1 Egg
  • 2 c Flour
  • 3/4 t Baking Powder
  • 1/4 t Salt
  • 1/4 t ground Nutmeg
  • 1/2 c crushed Butterscotch Candies
  • 1 1/2 c Powdered Sugar
  • 1/4 t Rum Extract
  • 2 to 3 T Eggnog
  • Yellow Colored Sugar

Preparation

Step 1

In a mixing bowl, cream butter and sugar; beat in eggnog and egg. Combine flour, baking powder, salt and nutmeg; gradually add to creamed mixture. Divide into three portions and refrigerate overnight.

On a lightly floured surface, roll out one portion at a time to 1/4" thickness. Cut with a floured 3 1/2" star cutter. Cut out centers of cookies. Line baking sheets with foil and grease foil. Place the large star cutouts on prepared baking sheets. Sprinkle 1 t candy in center of each. Repeat with remaining dough, reroll cutouts if desired. Bake at 375 for 6-8 minutes or till edges are golden. Cool on baking sheets for about 5 minutes before carefully sliding onto wire racks to cool completely.

For icing, beat powdered sugar, rum extract and enough eggnog to achieve drizzling consistency. Drizzle over cooled cookies and sprinkle with sugar. Let stand till hardened.
