GROUND*****Turkey Meatloaf with Feta and Sun-Dried Tomatoes

Ingredients
- 8 Servings
- Vegetable cooking spray
- 1/2 cup panko
- 1/4 cup chopped sun-dried tomatoes (right out of the jar is fine, you don't need to cut them any smaller)
- 2 cloves garlic, minced
- 2 eggs, at room temperature, lightly beaten or 7 tablespoons of BreakFree
- 2 tablespoons skim milk
- 1/2 cup crumbled light feta cheese (120 grams)
- 1/4 cup grated pecorino romano (1 oz.)
- 2 tbsp. fresh basil chiffonade
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 pound ground turkey

Preparation
Step 1
* Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F.
* Spray a 9 by 5-inch loaf pan with cooking spray, if making the entire recipe, or a mini-loaf pan if just making one-fourth.
* In a large bowl, stir together everything except the turkey. Add the turkey and gently stir to combine, being careful not to overwork the meat.
* Divide mixture into four and freeze three servings.
* Carefully pack the remaining meat mixture into the prepared pan and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 45 minutes for a large loaf or 25 to 30 minutes for the smaller one. Remove from the oven and let rest for 5 minutes. Transfer to a plate or cutting board and slice.
