  • 6 potatoes, baked 6
  • 50 ml onion, chopped 1/4 cup
  • 45 ml butter 3 tbsp
  • 250 ml sour cream 1 cup
  • 375 ml cheddar cheese, grated 1 1/2 cup

Step 1

Slice tops off baked potatoes. Leaving the jackets intact, scoop out the potato flesh. Place potato flesh in bowl. Mash.

In a skillet, saute onion in butter. Add to mashed potatoes along with sour cream and half of cheese. Mash again. Fill potato jackets with mashed potato mixture. Sprinkle remaining cheese on top. Bake in preheated 325 F (160 F) oven for 40 minutes or until potatoes are thoroughly heated.
