Ingredients
- 1 pound beets, peeled and cut into matchsticks
- 2 medium onions, sliced into half-moons
- 2 large carrots, peeled and cut into matchsticks
- 3/4 pound white cabbage, cut thinly into shreds
- 2 Tablespoons olive oil
- 5 cups vegetable stock
- juice of 1/2 lemon
- salt to taste
- Coarsley ground black kpepper
- sour cream
- finely chopped parsley or chives for garnish.

Step 1
Saute onions, carrots, and beets in olive oil over medium heat.
Bring stock to boil. When vegetables are soft, and the cabbage an stock. Bring to a boil and simmer 15-25 minutes. season to taste, and add lemon juice.
