Ingredients
- 4 slices bread (multigrain or French)
- 1/4 cup (50 ml) ricotta cheese
- 1/4 cup (50 ml) diced bottled roasted red peppers
- black pepper to taste
- 1 cup (250 ml) cooked ground chicken
- salt to taste
- 8 thin slices Old cheddar or Gruyere cheese
- 2 tbs (30 ml) olive oil

Preparation
Step 1
Lightly toast bread
Mix ricotta, roasted pappers, black pepper, chicken and salt.
spread over toast and top with cheese slices.
Broil for 1-2 minutes until cheese begins to melt.
Sprinkle with olive oil if desired.
Variations:
Use 1 cup (250 ml) diced cooked chicken breast/thigh instead of ground chicken.
Use smoked Gouda instead of Cheddar or Gruyere.
Use 1/4 cup (50 ml) diced sundried tomatoes instead of roasted peppers.
