Ingredients

  • 3 c. fat free chicken broth
  • 4 - 4 oz. cooked lean skinless boneless chkn breast, shredded( 1 Shop Rite roasted chicken, then pull it apart)
  • 1 - 1 big can crushed italian tomotoes
  • 1 - 1 big can sweet corn kernals
  • 1 can red kidney beans,
  • 1 can black beans (optional)
  • 1/2 - 1/2 c. chopped onions
  • 1 - 1 T. Fresh Lime Juice
  • 1 - 1 T. fajita seasoning mix
  • 1 - 1 t. minced fresh garlic
  • 1/4 - 1/4 t. ground cumin
  • 1/4 - 1/4 t. chilli powder
  • 6 - 6 baked tortilla chips, crushed

Preparation

Step 1

In a med. pot sprayed w/nonstick spray, cook onions, garlic, seasoning, and spices over med. heat until onions soften, 3 to 5 min. Add chicken broth and bring to a boil. Then reduce heat to low and simmer for 10 min.


Add the corn and diced tomatoes, and continue to cook for 5 min.


Add chkn, and lime juice. Stir for 2 to 3 min. to thoroughly blend flavors.


Once ready to serve, top each serving w/ crushed chips and, if desired, cilantro, sour cream, and/or cheese.
