Ingredients
- DRESSING
- 1 can (4 oz) chopped green chiles
- 2/3 cup sour cream
- 1/4 cup fresh cilantro leaves, coarsely chopped
- 2 Tbsp. lime juice
- 1/2 tea. pepper
- 1/4 to 1/2 tea. Tabasco
- 1/4 tea. salt
- POTATOES
- 3 lb. red new potatoes, sliced 1/2" thick
- 2 gallons salted water
- 1 cup vegetable oil
- salt and pepper to taste
- 1/2 red onion, sliced thin

Step 1
DRESSING:
combine ingredients in a blender and puree until smooth.
POTATOES
Place potato slices in stock pot with salted water and bring to a boil. Cook potatoes until a fork slides into them with some resistance, about 10-15 minutes. Remove potatoes from heat and drain.
Toss potato slices in oil, salt and pepper and place on a hot grill. Grill potatoes until lightly caramelized. Combine grilled potatoe3s, onion slices and dressing in a bowl and toss.
Serve warm as a side or chill and serve as a salad.
