Ingredients

  • Pork Chop Gravy:
  • 3 ducks
  • salt
  • lemon juice
  • carroway seeds
  • 2 - 1 " thick pork chops
  • pork fat (from butcher)
  • garlic powder
  • 3/4 c flour (or more)

Preparation

Step 1

Clean ducks with cold water, salt and lemon juice mixture.

Rub lemon juice on first, then sprinkle carroway seeds on top.

Place ducks on flat racks inside a large pan, 3 racks per pan.

Wad 4 tin foil balls to hold racks from the bottom of the pan.

Cook at 350 until dark brown.

Duck drippings are not good for gravy.



Pork Chop Gravy:

Wrap pork chops in pork fat. Add garlic powder and salt. Place in pan and cook in oven same as ducks. Place drippings in a pan on top of the stove. Add 3/4 c flour or more. Stir with a fork til thick. Cook until brown. Add seasonings if needed.
